The following seasonality list is unique to the Scottish landscape and its surrounding regions. While growing cycles naturally vary across different climates, this guide reflects the specific rhythms of our local environment.
We are committed to using only the highest quality ingredients. To push the boundaries of flavor, aroma, and texture, much of our produce is transformed in-house using traditional preservation techniques such as fermentation, aging, salting, drying, and pickling..

Spring (March – May)
Spring greens, Purple sprouting broccoli, forced rhubarb, raddishes, leeks, brassicas, green herbs, Brown Trout (starts March), Sea Trout, Halibut, Langoustines, Mussels, Lemon Sole, Scallops, Crab, Wild Garlic (Ramsons), Sea Kale, Alexanders, Sweet Cicely, Gorse Flowers (almond scent),
Tip: Salt and pickle wild garlic buds, Pick Young new sprice shoots for infusing and pickling.
Summer (June – August)

Preservation Tip: Ferment gooseberries or infuse elderflower into vinegars and syrups for winter.
Autumn (September – November)
Oysters (Native season starts Sept), Mussels, Haddock, Whiting, Coley, Pollack, Langoustines (peak sweetness in colder water), Sea Buckthorn (ripe orange berries), Sloes, Rowan Berries, Rosehips, Crab Apples, Hazelnuts (Cobnuts), Chestnuts, Brambles (Blackberries). Chanterelles, Ceps (Porcini), Hedgehog Mushrooms, Chicken of the Woods.
Winter (December – February)
Scallops (at their fattest), Oysters, Mussels, Hake, Sprats, Clams, Cockles.Seaweeds (Dulse, Kelp/Kombu, Pepper Dulse—best in cold months), Douglas Fir needles, Heritage Apples (like 'Tower of Glamis' or 'White Melrose' from your stores).
Preservation Tip: Mushroom trim can be dried and powdered to make an umami rich seasoning to enhance risottos, soups and sauces
